Why does food need to be refrigerated?
Most people think of food as something that is eaten cold, so why not refrigerate it? After all, refrigerated food has been processed to kill germs and bacteria. This process preserves food while it remains fresh. In fact, refrigeration may actually increase the amount of time a food is available before it goes bad.
But there is a catch. The process of refrigeration itself creates a chemical reaction that makes food spoil in the first place. This reaction occurs because refrigeration systems contain chemicals that react to the bacteria and mold that live on and in foods. These chemicals may have been used to improve the taste and appearance of the food. As the food is refrigerated, it becomes more acidic and thus less nutritious.
